This blue cheese is easy going; with a mild, sweet and creamy blue cheese flavour. This 4kg cheese is cut in half and made with cream enriched milk that is inoculated with the famous Penicillum roqueforti.
The curds are hooped into large rounds, salted and cellared before being dipped in natural bees wax. This controls moisture and rind growth. Penicillum roqueforti mould is a living thing and requires air to thrive and grow, so we hand spike the cheese to allow air in.
Shadows of Blue is matured for around 2 months during which time the mould filaments penetrate the cheese and allow the proteins to break down to create sweetness and develop the rich flavours. The resulting cheese is soft and smooth, and creamy in the centre. There is an ever so slight bitterness in the lines of blue mould to balance the overwhelming sweetness.
