DESCRIPTION

This blue cheese is easy going; with a mild, sweet and creamy blue cheese flavour. This 4kg cheese is cut in half and made with cream enriched milk that is inoculated with the famous Penicillum roqueforti.

 

The curds are hooped into large rounds, salted and cellared before being dipped in natural bees wax. This controls moisture and rind growth. Penicillum roqueforti mould is a living thing and requires air to thrive and grow, so we hand spike the cheese to allow air in. 

 

Shadows of Blue is matured for around 2 months during which time the mould filaments penetrate the cheese and allow the proteins to break down to create sweetness and develop the rich flavours. The resulting cheese is soft and smooth, and creamy in the centre. There is an ever so slight bitterness in the lines of blue mould to balance the overwhelming sweetness.

CRAFTED WITH CARE

HANDCRAFTED TO PERFECTION

Our cheese curds are produced using traditional methods in large open vats, with cultures added by hand. Each cheese is pierced to ensure an even distribution of blue mould and hand-cut for the perfect shape. Wrapped in natural beeswax and aged for 2-3 months, our cheesemaker carefully determines the perfect moment when the cheese reaches the ideal firmness. 

 

Each batch is rigorously inspected for quality before packaging, resulting in a velvety, mild blue cheese perfect for any occasion.

How we Ship:

We deliver to Victoria, NSW and Queensland only. We ship on Monday and Tuesday via Express Post. We can’t deliver to PO Box or a parcel locker, only to a residential address. We have created a special insulation system and pack with several cool gel packs to ensure your order arrives in amazing and delicious condition.

Click & Collect:

Our free Click & Collect service is available at Cheese Shop at 73-81 Bessemer Drive, Dandenong South, VIC 3175. Simply pick and pay for your product via the website. Please bring your confirmation email when you come to collect your order.
