DESCRIPTION

Shadows of Red is a mild washed rind cheese, with a slight pungent aroma, but an oozy inside. It offers a creamy, buttery flavour with hints of earthy mushroom, savoury umami and subtle barnyard notes, all derived from the natural salty brine on the rind and the ripening process within the cheese. 

 

As it matures, the flavour profile intensifies, while the cheese itself gets more character and softens to a rich, creamy and oozy texture. This makes it a truly distinctive and special cheese.

FARMHOUSE WASHED RIND CHEESE

HOW IT'S MADE

Made in the tradition of a classic European surface ripened cheese where the young cheeses are regularly washed with salty water and a culture called Brevibacterium linens. Aged in the cellars, the rind develops a beautiful apricot orange hue that changes from soft to chewy as it ripens. 

 

The most noticeable attribute is the aroma and flavour; a beautiful stinky cheese that carries aromas of mushroom, rich Vegemitey smells, jamon, barnyard and yeasty characteristics.

  • Each cheese batch is cut by hand.
  • Aged for 12 weeks 
  • Each cheese is inspected for quality before being packaged.

SIGNATURE COLOUR

During maturation, each wheel is carefully washed and turned, promoting even ripening and striking apricot-orange hue rind. 

 

In early life some annatto is added to the wash, which add to the flavour, colour and pH balance of the cheese rind.
